I have been asked to make a red velvet wedding cake. From everything I have read, cream cheese icing goes best with it. What I would like is to use the cream cheese icing as the filling and then decorate with buttercream. I need a recipe that doesn't require refrigeration. Is that possible? Thanks so much.

Sorry, all cream cheese icing needs refrigeration. If you use the stuff from the can (yuck!), you might be able to get away with a day or so, but even the can says to refrigerate.
