Need Tips For Carving Cake

Hi all icon_smile.gif

I have been trying to perfect my topsy technique.. and I feel like i'm going no where. My big problem is carving the top at a slant and the edges in. I'm fine at stacking, since that's the easy part. Anyway, do y'all have any tips on how to carve the cake w/o carving too much? I always end up going way crooked on the sides.. and cutting more on one edge of the top than the other edge. It's a disaster.

Thank gosh my family likes cake balls... I have ended up with a few too many unfixable topsys icon_smile.gif

Sure. Flip the cake upside down. Set a cardboard on it the size you need the cake to be--cut away what you need using the cardboard as a guide. Of course the cake should be frozen for best results.
