Cake Fillings For Fondant Cake

I know that when you make a cake covered in fondant you shouldn't refrigerate it because it will become shiny due to the cold. So what are some cake filling recipes I can use that don't need to be refrigerated? Or do you guys refrigerate the fondant covered cake anyways?

Any of the sleeved fillings don't need refrigerated. I never refrigerate any of my cakes.
