Hello All!! I'm a newbie here...How long does it take you all to create a cake, start to finish? Lets say we're talking about a wedding cake 3 tiers. I think I'm afraid to work more than three days on it...is that too long? Will the cake start to dry?

My schedule for cakes goes as follows:
Tues/Wed--Baking
Thurs/Fri---Assembly
Fri/Sat--Decoration
So, essentially the cake may have been baked 5 days before the event, and I have not had trouble with my cakes drying out.
