Ok, so I made the pastry cream today. The party is tomorrow.

I was wondering 1) How long does the cream stay good in the fridge.

2) When should I take the cake out of the fridge and fondant it and put it out. The party is at 1.

Not sure what the pastry cream is but I'm assuming it's something that needs to be refrigerated?

Don't know what recipe you used for pastry cream...but the custard variety usually requires refrigeration.

As for covering your cake with fondant, you can do that now and then refrigerate the cake. (You have two hours to decorate and then chill thoroughly.)

For serving the cake, safe food handling practices would limit the time the cake is out of the refrigerator to TWO hours.

If you want to cover the cake in fondant and then serve the cake you can do so - but both these activities combined can take no longer than two hours.

You can return any eaten cake to the 'fridge and serve again... with another two hour serving window.
