I was asked to do a "cars" theme cake for a 5 year old diabetic boy. does anyone have a good sugar free cake recipe that they have used and wouldn't mind sharing. i would like it to be something that a child would enjoy eating.

They've got some pretty good recipes on the splenda website. If he likes chocolate, definately use a chocolate cake. It tastes much better than a yellow or white cake. I hope this helps.
Sugarshack has an excellent sugar-free chocolate cake. My mom is diabetic also, and I made this for her at Thanksgiving.

I did a sugar free cake for my boyfriend's mom last summer. I can give you the recipe if you like, but it's also dairy free so I'm not sure how popular it might be. However, there's a Splenda for baking that you can use and it tells you exactly how much to use in place of the sugar in a regular recipe and it's designed specifically for baking.
