Outdoor Wedding...please Help

I have an outdoor wedding and am struggling with filling ideas. What are some good fillig recipes that can stand up to the heat? The bride also wants cream cheese icing, but her mother and I both told her it may be difficult to pull off because cream cheese will melt. Does anyone have any tried and true methods or recipes for cream cheese that would work?

Oh..did I mention...the wedding is in April and in Georgia?

If you use a plain fruit filling such as raspberry, it will be fine in the heat.
One way of getting the cream cheese flavor into your icing is use Lorann oils cream cheese flavor. Make regular BC and use the flavoring in it. You may want to consider using a stabilizer in your BC as well to help it not melt.

Earlene Moor has a great CrCh icing recipe that will hold up. It should be on her site.... earlenescakes.com - I think

I agree w/the fruit filling. You can buy them at many cake stores in a plastic sleeve or Use jam or pie filling.

the sleeve fillings hold up under pretty much any circumstances.
