Substitue For Eggs

Hello cakecentral members

What can I use as a substitute for eggs? I have a customer who cannot have any dairy and she wants a carrot cake for Xmas Eve.

I found a recipe that doesn't require milk but it does require eggs and I need a substitute.

Also, what kind of icing can I use for a carrot cake other than cream cheese? I need an icing recipe for carrot cake with no dairy in the icing.

Did she specifically say no eggs, eggs aren't dairy?

Eggs come from a chicken therefore not dairy. I work with a lady who can't have dairy and didn't know that eggs aren't dairy. She thought because they are sold in the same area they must be dairy. Cracked me up.

Hmmmmm...I didn't think about that. I guess I was confused b/c she asked me to use egg whites in her icing but now I realize she may have asked for egg whites to substitute the butter.
