Gingerbread Cookies...

Hello everyone! I thought I'd make some gingerbread cookies to make for my big family get together on Christmas Eve. I was wondering if I could go ahead and make all the cookies, say today or tomorrow.. then keep them refrigerated until the 23rd, then decorate them?? And also.. The icing I use, calls for a little milk.. do they need to be refrigerated after iced? I tried that once, and they got blotchy and wierd looking.. so I didnt want too again, but obviously will if I need too! Thanks!

I think your cookies would hold up fine if you just wrap them up nice and tight in saran wrap (after the icing dries), place them in a sealed container (like a Tupperware), let as much air out as possible. If you have a cooler spot in your home, like an unheated room, then that should be fine. There is enough sugar in icing recipes to offset any milk product.

Cookies in the fridge get dried out really fast, just like cakes do.
