I have a request from a lady who is jonesing for a red velvet cake with that cooked flour, milk, sugar and butter icing. I am a cottage foods bakery and if this icing has to be refrigerated, I can't sell it.
Can anybody offer me any info?? I'd like to call her back soon, since I have a wedding to prepare for whether or not I make this cake for her...

I do cakes out of my home and I think it would not be allowed in my town because it is cooked. But that may not be the case with you. I'm very interested in the answers!

you can buy cream cheese icing from sams, they do not refrigerate it, I asked. I think the cake itself does not need refrigerated. Also Rich's bettercream, doesn't have to be refrigerated after whipped.
Oh, no, it has to be this icing. She is adamant about it. Any help appreciated. I have to call her back today...
