Candy Making And Uncooperative Weather Question

I'm SO frustrated! It's been rainy and humid here in my part of AL all week. I still need to make caramel popcorn, salted caramels, and espresso fudge for the teachers's gifts. (last day of school is tomorrow) Problem is it's STILL rainy and humidity is 93% icon_sad.gif
Is there anything I can do to counterbalance these unfavorable weather conditions or is it a lost cause? I think I'll be okay w/ the peppermint bark... it's Merkens white choc. buttons and peppermint brickle (it has always set up for me before). The teachers look fwd to these gift baskets of different goodies so I really hate to disappoint. Any tips???

do you have a dehumidifier that you could run in the kitchen? that might help.
