I have three cakes to do for Friday and Im wondering if I make a large enough batch of royal icing (with meringue powder) how long would it stay good for. Do I need to refridgerate(spl?) it?
RI will be ok for several weeks at room temp.
You will need to re-beat to get it to the proper consistency again.
