I made a biscuit (12 eggs, 12 oz brown sugar and flour) with orange peel for my baby's baptism cake. I'm planning on covering it with marzipan, so I figured I could use orange and almond as main flavors and use amaretto to moisten the biscuit, orange marmalade as one of the filings, and whipped cream with almond essence for the second one. Then either marmalade or almond buttercream as crumb coat (we don't like buttercream as filing, it's too heavy). I'm missing one more filling, though, and I don't know if I should go with a very dark chocolate ganache or mousse, or to stick to orange and do an orange custard filling instead. Any ideas?

Well that's a lot of flavors. I think I'd stick to the orange....probably a mousse or custard.
