This year I made my traditional Christmas fruit cakes and covered them as usual with almond paste (marzipan). I used apricot jam mixed with some good whiskey to attach the marzipan to the fruit cake as always.

I would normally then cover the marzipan with RI but this year want to use mmf for a change.

My question is do I just brush the marzipan with some apricot jam before applying the fondant or is there something else I can use?

Would the apricot jam be okay between the marzipan and the mmf? Would it go moldy?

Could I just mist the marizpan with water?

Any help greatly appreciated, TIA icon_smile.gif

Misting with water would work just fine.

I would love to see a picture of a cut piece to see the cross section.

Water is probably a better choise as fruitcakes can be saved for such a long time. But......very lightly brush or mist the back of the fondant piece - not the cakeicon_smile.gif
