I have baked with the stick in the cookie and no the stick didn't change color. I have also read that you can bake without and attach later with royal icing.

I bake my cookies with the sticks in all the time. The color change is not that noticeable.

Have a look at the mini-how-to I made if you need help. Here is the URL.

I also have a few of my cookies on a stick in my album that way you can see there's not much of a change.

I don't happen to bake mine on a stick, but I know you can find lots of info on this in the Cookie Forum if you have more questions. icon_biggrin.gif

I don't bake the stick in because I don't wanna have to make room for the sticks on the baking sheet. I push the sticks into the cookie as soon as they come out of the oven. My cookies are a bit thicker than usual though, probably 3/8" thick. And I don't adhere it with icing either. As long as the cookies are hot, they'll go right in without cracking. As it cools the cookies contract, holding onto the stick.
