It seems the longer I do cookies, the more I go for a lighter and lighter color on the bottom. But the last couple orders I had, the cookies were too soft, because they had been baked a minute or two less. Does anyone have any ideas?? I use a recipe very close to nfsc and bake on parchment.
let them air-dry a day. Or longer at a lower temp.
My neighbor uses an insulated cookie sheet and her cookie bottoms are always very light. Never tried one though. I prefer lightly browned edges on my cookies.
