I need to make and decorate 2 cakes by Friday morning. How far in advance would you say is OK to bake and decorate? I was hoping to get the baking and decorating done mostly today (bake early and decorate tonight) beause tomorrow I have a busier day. Is that too soon? Would you store them in the fridge or just on the counter? Would you cover them with something? They are both just being frosted/filled with buttercream. I just dont want them to dry out or something.

Thanks!

On the counter and if possibly inside a plastic tub. Never refrigerate a cake uunless it has perishable fillings. All refrigeration does is hasten the staling process.

So inside a plastic tub (w/the lid on I am assuming) even after decorated? I never would have thought of that to keep it fresh!

Thanks!

"leahs" if cakes should not be refrigerated unless it's perishable, why is it that they are kept refrigerated in supermarket bakeries? icon_confused.gif And how long can you keep it on the counter without tasting stale? Thank you!
