So I am always trying new things because granola bars get old so I have tapped into the cookie world for YUMMY buy also healthy and protein packed cookies for my little girl to eat at gymnastics as a workout snack to keep her energised through her 4 hour workouts and these new cookies I came up with today are sooooooo YUMMY I thought I would share. Here is the recipe. Oh and this is all organic of course you don't have to buy organic ingredients
3/4 c butter
3/4 c packed brown sugar
1/2 cup granulated sugar
1 tsp baking powder
1/4 tsp baking soda
1 tsp vanilla
1 c whole wheat flour
1/2 c vegitable protein powder
3 pkgs (1 cup) instant apple cinnamon oatmeal
about 1/2- 3/4 c your favorite trail mix (broken into little pieces) .... I used a pistachio/cashew/almond mix.
preheat oven at 375 degrees.
cream butter, brown sugar, granulated sugar baking soda and baking powder until mixed well scraping sides of bowl often. Add eggs and vanilla until mixed. Slowly add flour and vegetable protein powder until thoroughly mixed. with a spoon stir in oatmeal and trail mix. scoop dough balls onto cookie sheet and bake for 10-12 minutes. (I use a medium size ice cream scoop to form the balls and it makes 3 dozen)
These are super yummy and power packed.
