Nfsc How Long Do They Last?

I want to make NFSC for my birthday invites and I know that I need 2 days to let them set up after decorating before bagging (per Antonia74 suggestion). Because it is Thanksgiving, I will not be in my house and need to bake the cookies before I head out of town, then decorate elsewhere.

I will hand them out Monday and Tuesday, can I bake them 7 days before?

What if I bake and store in airtight containers until Friday when I decorate?

Will they still be "fresh?" I know how I can stretch cakes, but cookies... no idea!

I have left mine in a container for more then 7 days and they were still as good as ever. They were decorated with RI as well.
