Hey! Happy Thanksgiving CC Friends!

I'm looking for a recipe that has nothing to do with cake. It's a Twice Baked Potato Casserole recipe. I found a few on foodtv.com that sound good but I wanted more to pick from so if you have a favorite one would you please add it here? I'd appreciate it big time! thumbs_up.gif

I love that website as well! I've never heard of baked potato casserole, now I'm going to have to look it up!!!!

This is a make ahead recipe I have used for years.

Party Potatoes
This one can be made a day ahead and refrigerated or a month ahead and frozen. It is excellent for serving half one day and the rest frozen for another day.

8 to 10 medium Potatoes
1 cup Sour Cream
8 oz. package Cream Cheese- softened
Garlic Salt - to taste
Paprika
Chives/Parsley (if desired)
1 to 2 tablespoons soft butter

Peel and cook potatoes. Place cream cheese and sour cream in the mixer bowl, beat at medium speed until well blended. Add hot potatoes gradually, beating constantly until fluffy. If too thick, thin with a little milk. Season to taste with Garlic salt and stir in chives or parsley. Place in a oiled 2 qt. casserole. Brush with soft butter and sprinkle with paprika. Bake at 350 degrees for 30 minutes. Allow more time if refrigerated or frozen.

You can use this recipe for twice baked potatoes.

Thank ya'll so much! I haven't been able to get on CC since I made the post. Thanks a bunch! I bought cheddar cheese, cream cheese, sour cream & bunches of potatoes before I posted this so it looks like I have my ingredients to try these recipes. Thanks so much~ Have a Blessed Thanksgiving~
