How do you make the cream cheese filling that's baked into the cupcakes or muffins?

I'm not sure if this will help you or not but this is a recipe for Cheesecake Brownies that you may be able to adapt for a filling for cupcakes.

The filling says....
Beat 8 ozs. softened cream cheese until smooth. Add 1/3 cup granulated sugar and mix until blended. Add one egg and 1 tsp vanilla and mix until just blended.

Make your cuppy cake recipe as directed and plop a heaping tablespoon of filling into the batter and bake until done. Cheese will come to the top a bit and be lightly browned when done. HTH. icon_smile.gif

it's basically just a cheesecake recipe and you put a spoonfull of cupcake batter, spoonful of cream cheese mixture and then more cake batter......my DH doesn't bake but boy can he make some Chocoate/cream cheese muffins.....mmmmmmmmmmmmmm
