I've been asked to make a champagne cake with Lemon chiffon filling. I have never made either of those! It's for a baby shower. Does anyone have recipes for this? Also, what would I ice it with and can I still cover with fondant?
Thanks!!!

Champagne Cake recipe, very easy, very moist.

As for the Lemon Chiffon, I imagine that to be somwhat like a lemon cream filling. So you could go a couple of different ways.

Make a lemon flavored SMBC, with some fresh lemon juice, and some lemon zest.

Or make a lemon curd, and lighten it up with some whipped cream, or again some SMBC.

Or I found this Lemon Mousse recipe:

Thanks so much! I'm going to try the cake. It sounds delicious! What deos SMBC stand for? I'm obviously new at all this!

SMBC = Swiss Meringue Butter Cream

Its lighter than regular BC, not as greasy tasting, and a lot less sweet. Everyone who tastes it, loves it. I make big batches and freeze in gallon ice cream containers with the date marked on it.
