Hi, can anyone tell me if it is ok to cover a cake iced with cream cheese icing. I am making a carrot cake for my niece and want to use a fondant overlay. Thanks

I think it would depend on the butter content of your icing recipe. If you've used this icing before and put it in the fridge and it's firmed up nicely, I don't see why you couldn't put fondant over the top. Just make sure to chill everything well before putting the fondant over so you don't have icing oozing out the bottom. icon_smile.gif Good luck!

I've done it and it was fine. My cream cheese icing has no shortening, it is all butter and it worked fine and tasted great.
