What type of icing do you use on the top tier of a wedding cake.? I know its saved for the 1st anniversary so do I use just shortening and no butter?

I give my brides a gift certificate for a fresh cake on their first anniversary so they serve the whole thing at the wedding.

However, any bc icing freezes fine. Reportedly SatinIce will freeze, but I haven't personally done it.

Every bit of any wedding cake should be iced the same.
I have heard many of the couples no longer keep it for a year...but for a month or even eat it as soon as they return from their honeymoon.

I always recommend they eat the top tier for their 1st month's anniversary or before.
