My favorite filling (this week, anyway!) is cream cheese with marshmallow fluff. You can use different flavors of cream cheese for a nice flavor...i know right now there are pumpkin cream cheese options out there.

Cream cheese mousse and pumpkin butter (like apple butter, but made with pumpkin) in a spice cake
Spiced apple butter in caramel cake
Caramel/dulce de leche in just about anything
Cinnamon buttercream in just about anything

Ooh Skichic, I wouldloveto have your recipe for caramel apple filling if you are willing to share! I have been reading all over about apple cake and caramel and want to try it myself. Anyone have a good apple cake recipe? Thanks! Sorry I don't have a filling to add, I am just now getting into fillings. So far I have only used sleeve ones but I am trying to brandh out!

All of these sound wonderful!! If anything tastes like fall to me, it's warm spices and pumpkin.

Spiced pumpkin mousse *drool*...Theresa, do you have a recipe you could share? Sound NUMMY!
