I have just been approached by a lady opening a small shop selling cake boards, birthday candles and other small items to the home baker. She wants to know if I can make her some sugar-free cakes for her clients. Apparently she has a client for these products but unfortunately the lady that used to supply them has died. I really dont know much about her needs other than this so I thought if I could get together some tried and tested recipes before arranging a meeting with her I can at least have some ideas of what I could provide and costings. I have looked through the forum and taken some ideas from the diabetic section, but not all these are sugar-free. If there is anyone that can help provide tried and tested recipes, or knows which alternative is the best to substitute in recipes I would be very, grateful.
