I want to do a sampling of some of my flavors to a lady who does banquets and is considering using me as her backup. I am gonna do a 6" carrot cake with cheesecake flavored frosting. I need help with the cupcakes that I will be doing as well. The cupcake flavors that I will be doing are strawberry, chocolate, and white. Some will have filling and some wont. What are your suggestions for filling flavors? I want to win this one over.

the chocolate can be filled with nutella, a hazelnut bc, raspberry preserves, kahula bc, bailey's bc...whatever filling you would use when you tort a chocolate cake
White cc with any citrus curd (lemon, lime) - rapsberry preserves, again -anything you'd typically use when torting would be fine
i love to fill my strawberry cupcakes with the fruit dip that you make with marshmallow cream and cream cheese mixed together, then fill the normal way.
that sounds good mixinvixen - strawberry with lemon curd would be yummy too.
