Dear CC Friends: Hi! I am trying to make a Piña Colada cake w frosting ...but I need help on the recipe. Do you have a Piña Colada cake recipe from scratch (that is NOT involving a cake mix)? Please HELP!!!!!! icon_cry.gif

Most are made with a boxed white cake mix. I imagine you could take a recipe for a white cake and combine it with the recipe using the boxed mix for the result you are looking for.

give me some more info...do you want:

(1) a pineapple cake with coconut buttercream

(2) a coconut cake with pineapple buttercream

(3) either of the above with dark rum in it?


i am sure that we can come up with something

I make a coconut cake recipe from Epicurious:

It's very moist & delicious. You could put some pina colada or pineapple flavor in the cake or make a pina colada/pineapple filling. It depends on how much pineapple flavor you want. You could also flavor your bc with pineapple.

This is my coconut cake recipe. For best results use full-fat sour cream, not low-fat or non-fat. It will make one 9 x 13 or two small rounds, but the cakes won't be really deep. They're also difficult to torte because of the coconut in the cake. It catches on your knife or leveler.

2 1/4 cups Flour
1 1/2 cups Sugar
1/2 teaspoon Salt
1/2 teaspoon Baking soda
1 teaspoon Coconut extract
1 teaspoon Vanilla
1 cup Butter, softened
1 cup Sour cream
3 Eggs
1 cup Coconut
Bake at 325° for 60 minutes.

I have made this cake with pineapple filling as a pina colada cake.

Pineapple Filling:
Drain 1 small can pineapple in its own juice. Set aside juice and add water to make 1 cup of liquid. In a medium saucepan, combine juice/water mixture, 1/3 c sugar and 3 Tbsp cornstarch. Cook over medium heat until mixture thickens. Add 3 Tbsp pineapple jello and stir until dissolved. Remove from heat and stir in 1Tbsp rum and reserved pineapple.

If you want, you can flavor your favorite icing recipe with coconut and/or rum extract to complete this.

Meh . . .I use my regular white cake recipe, throw in a handle of squeezed dry crushed pineapple, a handful of coconut, a small bit of pineapple flavoring , a small bit of coconut flaviring and a small bit of rum flavoring.
