Cookies Staying Soft Or Fresh Question

Most of my business that I have are my Choc Chip/Oatmeal & peanut butter cookies. I Put them in clam style packaging like the lofthouse cookies. When I bake them they stay moist for maybe 2 days then after they start getting hard.....What can I do to keep the freshness ?How do the big guys keep there cookies soft while sitting on the shelf?

They probably have lots of preservatives in them ... that's the difference between commercial produced cookies and the ones you and I make. In the car dealership order I have, I put the cakes in a ziplok bag, then put those in a cake box, because sometimes they will have cookies for more than a day ... the ziplok was a big help in keeping them soft for them in those situations. (Althougth I tell them if they start getting too many surplus cookies, to let me know and we can decrease the order for the next few days ... I don't want them sitting stale cookies out!
