Is rolled icing more like fondant than buttercream as far as taste and texture?
Fondant IS rolled icing.

Actually, there is a difference. Look for the recipe for rolled BC and then for a recipe for Marshmallow Fondant. They're both applied the same way, but rolled BC is not stretchy.
