How long do you let your cake sit at room temp. before applying fondant, or do some of you cover them cold right out of frig. Just wondering what my options are but I have a cake I am doing for this weekend (wedding) and the chocolate cakes gave me fits last night were crumbling around the edges, it is supposed to be a dense cake but it was being weird, so I made a spackle out of cake and icing and crumb coated the choc. cakes and I am just paranoid to let them get to warm before applying fondant, I am kind of freaking out. Help please, all of you wonderful cakers!!!

You can apply fondant over a room temp cake, or a cake out of the fridge. It doesn't matter. Some like to do it right out of the fridge, cause the cake is nice and firm.

Sometimes if I cover a cake in fondant from the fridge, it will show a little moisture coming through, but it will dry.

Good luck!

This is more of a...what you prefer method. Every baker has their own ways. I prefer to do it right out of the fridge.
