I think I remember a roller coaster cake in a Wilton book. It was 3 different cakes on different height pedestals, and between each one they had made the tracks. The cars were then set on. I can't remember the issue, but it seems like you could do 3 small cakes, make tracks out of gumpaste, and with the cakes at different heights, it looks more up and down "roller"-y.

Am I making any sense?
