I know some people love them and some people hate them, But I am making cakepops (bakerella's) for the kids school function, I have made them several times before and alway pop the cake balls in the freezer before coating them. Tonight they look great after coating then they start to crack. What am I doing wrong.

I don't really have an answer for you, I have used a tiny bit of shortening in my chocolate mixture, I haven't really had any problems with the cracking issue, but then again I have this stupid one, I am having difficulties with my cake pops too. Mine are super gooey in the middle even after letting them stiffen up. Do you suppose I used too much binder?

Sorry to hijack your thread.

I'm looking forward to the answer to your question too.
