I have been trying different buttercream recipes hoping to find the right one. I tried the "Perfect Buttercream" recipe from baking 911. It is made with heavy cream. I loved the taste (not too sweet) and texture, but it does not crust. I am searching for a not-so-sweet buttercream that crusts. What ingredient makes it crust???? Any recipes or ideas are appreciated!

Read the dream whip observations & questions thread. There are a few BC recipes posted that are supposed to crust nicely and not be too sweet. I haven't tried them yet myself but intent to this weekend!

I add a little salt to mine when I don't want it to be too sweet. I dilute salt in a little warm water and then, put it in my icing, until I get the taste that I want.

..try adding meringue powder to make it crust!

Yup! Merangue powder or flour will make it crust icon_biggrin.gif
