Hi All,
Friends of mine won a Simon Pearce hand blown cake plate for me at a fundraiser last week. It's worth 150 bucks! The only request was that we share a carrot cake off of the cake plate. They are both carrot cake connisseurs. I'm looking for a carrot cake recipe that will knock their socks off!!! (they also would like a cream cheese frosting).

I made this cake last week for the first time and had 6 people ask for the recipe. It is a very wet, almost runny batter, but it does turn out great!
I changed the pecans to walnuts.

My mom's carrot cake is awesome, so here it is:
CARROT CAKE
1 ½ cups sugar     
1 cup vegetable oil
3 large eggs
2 cups all-purpose flour
1 ½ teaspoon cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla
3 cups shredded carrots
1 cup coarsely chopped pecans

Heat oven to 350 degrees. Grease bottom and sides of pan.
Mix sugar, oil and eggs in large bowl until blended, beat one minute. Stir in remaining ingredients except carrots and nuts. Beat 1 minute. Stir in carrots and nuts. Pour into pan.

Bake 40 to 45 minutes.

Ice with cream cheese frosting. Sprinkle with nuts.
