Cake Filling.... I Need A Good One!

Hi All!


I am making a wedding cake and need a recipe for a GOOD white chocolate mousse filling.

Please help CC you are my only hope!

I used Pastry Pride mixed with a box of dry pudding mix. Just whip the Pastry Pride until it's medium peaks. Add enough water to the dry pudding mix to make it a runny paste, not drippy, though. Then fold that mixture into the Pastry Pride. It's delicious and fairly inexpensive to make.

Whipped White Chocolate Ganache has a light and mousse-y consistency without having to deal with gelatin and egg whites.


1 c Heavy whipping cream
6 oz Finely chopped white chocolate

In a heavy medium saucepan over medium-high heat, bring the cream
to a boil. Add the white chocolate and remove from heat. let the
mixture stand briefly; stir until smooth. Transfer to a metal bowl
and refrigerate until chilled thoroughly, stirring occasionally. (To
speed the process, set the metal bowl over a larger bowl of ice
water; stir the chocolate mixture until cool.) With an electric
mixer, beat the white chocolate mixture just until fluffy, about 1
minute

Thank you so much will both of these filling be ok as a filling in a wedding cake? Will they stand up in a tiered cake?
