I am making a chocolate version of the WASC cake (which will be covered in white fondant). I need an idea for a filling because chocolate/ganache filling seems like too much chocolate for such a dense chocolate cake. Does anyone have any recipes for something that works well with chocolate yet isn't as rich as ganache?

Please help!

I like raspberry fruit filling for chocolate cakes...

IThe sleeved raspberry pastry fillings are good (quick and easy) but you can make your own.

Here are some CC recipes:

(The small amount of alcohol renders the filling shelf stable for a few days.)

Easy & Tasty Cream Cheese filling:
(This is great alone when using a rich frosting, or layered with a fruit filling when frosting with an American b/c.)

Chocolate mousse is always good.. it's light and if you make it with dark chocolate it can help cut the sweetness of the cake. icon_smile.gif
