Somebody help me!!! A teacher from my child's school just called and wants a gluten free cake (I'm assuming with frosting) for this Sunday! I have heard of gluten free foods but have no idea where to start except to turn to the wonderful and creative bakers here. Somebody please help! Recipes, ideas, websites to look on, anything will be greatly appreciated!

Dont panic.

Gluten free is very easy to do. Pure icing sugar. Dont use anything with wheat, rye or barley.

Do not use merangue powder as this is not generally gluten free.


Do you have any idea what sort of cake she wants? Carrot, chocolate etc????? I have a number of recipes.

Just remember that they dont tend to rise as much.

I purchased a gluten free cake min( I think the brand was "really good food company" and used regular buttercream made with shortening, filled it with raspberry jam and the cake was perfect and it tasted great!
