I am doing a crooked wedding cake this month, and it has to be pineapple. The groom is allergic to coconut, so that took out alot of possibilities for me. Does anyone have a good sturdy recipe that I can use for a crooked cake? I really like scratch cake recipes, but will also use a good enhanced recipe if I have to. Please Help!!!!!!!

Try taking your basic vanilla cake recipe, from scratch or modified, and adding some crushed pinapple to it, and about 1 tsp of pineapple extract.

That should give you a very moist and pinapple-y flavored cake.

i agree with jayde...here is my pineapple cake recipe (based on my vanilla cake recipe)

Makes 8 cups of batter

2 1/2 cups + 2 tbsps allpurpose flour
6 tbsps cornstarch
3 tsps baking powder
1/2 tsp salt
8 ounces margarine/butter
2 cups sugar
4 eggs
1 tsp Lorann pineapple flavouring
1 cup buttermilk
8 ounces crushed pineapple (with juice)

Preheat oven to 325ºF. Grease and flour pans.

Sift and combine all-purpose flour, cornstarch, baking powder and salt in a large bowl. Set aside.

Cream together margarine/butter and sugar.

Add eggs one at a time. Add flavouring.

Alternately add the dry ingredients and buttermilk to the cake batter, beginning and ending with the dry ingredients.

Fold in the crushed pineapple along with its juices.

Pour batter into prepared pans and bake until done.

Remove cakes from the oven and set aside to cool completely before decorating or freezing.
