Hi and welcome!

If you gave us an example of what cake project you're working on, we can give you more specific help, but in general, when carving a cake use something that's dense and closely-textured, like a pound cake. Many people chill their cakes once they're carved and crumb coated, and then apply the fondant to the chilled cake.
