I am making a princess castle for an adorable little girl turning 4, Princess Olivia is what she likes to be called. Well this poor little thing is allergic to eggs so is there some kind of substitute for meringue powder that you can use to setup your buttercream frosting? And if not does anybody have any suggestions for me? icon_confused.gificon_confused.gif

You don't need meringue powder in buttercream, no matter what Wilton tells you.

I've never used merinque powder in my BC ... for 25 years I never knew what it was used for until I got on CC and started reading about it.

Maisie is right ... you dont' need it.

Yup, heartily agree! I haven't used Wilton's recipe in ages, I don't even remember it. Search here on CC for crusting buttercream recipes. There are tons without it. I used another recipe for years that called for it, and even with the meringue powder, it wouldn't crust here on Guam. Now I use one by Serious Cakes, without it, and it crusts perfectly!
