Freezing Smbc

My in-laws are coming to visit and I'm making a cake for my MIL's birthday on Thursday. My fridge will be packed to the gills with food, so there is no room for cake. I was planning on making her a chocolate cake with chocolate SMBC...could I make it tomorrow, chill it, wrap it really well in plastic wrap and freeze it until Thursday?

It might sweat when you defrost it and smudgify your icing. I mean it might not--if it's for family you can spatula the icing around again--let it completely defrost before you diddle with it. I'd recommend just keeping it chilled.

Thanks, k8memphis! The texture of the icing won't get funny from freezing?

I'd prefer to chill it, but I've barely gotten the milk to fit in the fridge...
I think I'll give it a try as long as the icing's texture won't get messed up. I'll leave it wrapped while it's defrosting and if I have to smooth it I will. It is just for family, so it's a good time to test, I guess... icon_rolleyes.gif
