I'm thinking about doing cake balls for my god-daughter's weddning. This will be a large undertaking as she is expecting 400 guests to attend.

How do they need to be stored? I will be driving 700 miles and will not have access to a refrigerator. If this won't work, does anyone have any other good ideas?

Thanks, Kelli

Well you can freeze them before dipping them in chocolate. As far as the drive, maybe dry ice. I just overnight mailed my grandma some small cake ball lolliepops. So we shall see how they fair up in the heat. I did freeze and them dip, and placed back in freezer for 3 hours before packing for mail. Took to post office, just before they were to ship it out. Spoke to them in advance to see when things leave there.
