This may not be in the right forum so forgive me...
Ok, I got a call from a bride yesterday that "forgot" to order her wedding cake...for October 11th. How she forgot I'll never know.
Anyways. She wants red velvet cake with the whipped icing or maybe creamcheese icing. The reception is outdoors, I see the icing melting. Am I wrong to think of covering if with fondant to keep it from melting? I'm also wondering how the whipped icing would hold up under the mmf as to the creamcheese icing. Any suggestions? Oh yeah, she can't meet until next Wednesday, 11 days before the wedding, to discuss anything.
Can anyone suggest a good r/v recipe? The ones I have always turn out dry.

As for the icing, I have used cream cheese icing under fondant w/out problems, but I would be concerned about a light, whipped icing not being able to hold up to the weight of the fondant. I'm not sure what to advise as far as the fondant helping combat the heat, though. Maybe someone else can help w/ that part.
