I am making DH a copy of the flavors from our wedding cake (his favorite cake of all time) for his birthday this weekend. The cake was whhite almons with Grand Marnier mousse. The problem is, I don't know what icing to try to make. I know we ordered "whipped cream icing"... And the icing was delicious, but it wasn't stabilized whipped cream, and it wasn't anything like the faux whipped cream icing that I've always made with my grandma's recipe. I was really light and fluffy, but the flavor was just different than anything we've ever had.
So I was thinking I would try either WBH House buttercream or SMBC to see if one of them comes close.
Any ideas on a recipe to try for a light, fluffy, not really sweet icing?
Bonus points if anybody has any idea what type of icing this might have been - USA Gourmet in Pittsburgh (who is now out of business) did the cake.
