Hi Everyone,

I just had a call for a cake and they want nuts and rasins as a filling instead of an icing filling. Anyone ever done this or have any ideas. All I can think of is like what they use for baklava (sp?) They want to try a sample tomorrow *sigh* Thanks.

Wow ! Just nuts and raisins, can you mix with maybe a caramel, or choc bc ? that would maybe give it kind of a candy bar taste .
What flavor cake is it ?

They may want a Lady Baltimore filling. I have never made one and therefore do not have any recipes, but try searching online for it.

This is from a collection of old fashioned recipes:

Nut and Raisin cake filling:

Ingredients

* 1 cup raisins
* 2 tablespoons lemon juice
* 1 cup chopped nuts
* 1/2 teaspoon salt
* 1 egg white
* 1/2 cup powdered sugar

Directions

Seed raisins and chop until fine; add chopped nuts. Beat egg until stiff; add sugar, nuts, raisins and lemon juice.
