Little Formalities Help

I will be making the Little Formalities on page 76 of the 2008 Wilton yearbook. They do not want them covered in fondant. My question is can I cover them in ganache and still use fondant for the little squares on top? Should they be refrigerated and will this affect the fondant? Thank you.

I haven;'t seen the perticular design you refere to but are the fondant sq sitting on the cake or standing up? If the stand up, then refrig'ing will effect them. Can you do all the other decorating & just add the sqs after friging?

The squares will be laying down on top of the little cakes.

Let's see -- I haven't used ganache very often either....I usually work in b'cream.
So as I remember ganache should not be frig'd once it is pouned or it will get very hard.
Also, it is very soft at 1st so I would wait until it sets up before adding the sqs w/a dab of melted choco or b'cream. HTH
