It's covered in modeling chocolate, not fondant, but maybe it can give you some ideas. This one is covered in stages.
Yeah...it really depends on the cake. Some I cover in pieces, and some I cover with one piece. It all depends on size and shape you are trying to cover and if you can hide the seams. I usually prefer to cover the cake in pieces if the seams will be covered or hidden...you just have more control that way.
