I have an order for a 12'' strawberry shortcake. I plan on using frozen strawberrys so it is juicer. Now, what kind of cake should I use, pound cake or sponge cake? I assume pound will hold up better, but will sponge taste better? Also what kind of whip cream should I use? Would SMBC be good? Or should I try Rich's bettercream? TIA
