I will be using cream cheese frosting to decorate a wedding cake next month, and I was hoping for some recipes and tips.
The customers want a frosting made with real cream cheese, not with cream cheese flavoring. I am worried about liability if the cake is not kept at proper temperature and the cream cheese goes off. I work for a small caterer (not a lot of refrigerator space) and I doubt we will have the ability to keep the cakes refrigerated once we start frosting them (4 tiers), and once the cake is delivered, who knows what will happen.
If anyone has any recommendations, please share them. I'd love your favorite cream cheese frosting recipe, too, hopefully one that works both for icing the cake and for piping.
Will the cake be in an air conditioned venue? I would be completely honest with the customer, tell her the same things you mentioned in your post. If you feel that the cakes quality could be compromised if it's not kept refrigerated, than tell her that.
